5 Minute Chocolate Mug Cake

I've been yet to jump on the mug/jar bandwagon. Today I joined the pack. I think I made a good decision. On Pinterest , I found a recipe for a chocolate mug cake from ATX Gluten-Free. The original recipe called for odd ingredients like Coconut Palm Sugar, Vanilla Almond Milk, and coconut oil. I'm not a proud owner of any of those ingredients. I decided to change the recipe to use normal ingredients. Here's MY recipe for a Chocolate Mug Cake:
 Gather your ingredients:

  • 1 large mug
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 tablespoons self rising flour
  • 4 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 2 tablespoons cocoa powder
  • 3 tablespoons milk

 1. Grease your mug with some cooking spray for easy clean up after wards. A little over kill is okay.
 Add your flour....
 sugar....
 egg...
 cocoa powder...
 milk... (aim for the mug not the counter)

 Oil....
 Vanilla....
 And MIX!
 And keep mixing until it's smooth!
 Make sure your flour is self rising.

 Pop it in the microwave for a 1 1/2 -3 minutes depending on the wattage of your microwave

 Not done yet... pop it back in for another 30...
 Wallah!

The white is chunks of egg that didn't get mixed in. I suggest beating your egg before you put it in... something I usually forget to do...

Sweet Saturdays (Well, Sunday)

Whoopsie.... it's a day late!
But anyway....
For a change, I'm going to share something I cooked up.
Cake balls. I warn you that they look like little brown balls of poop. I also warn you that they taste like little balls of heaven. I used the directions from Bakerella. They were SUPER simple to make.





I brought these to a fourth of july barbeque last weekend and everybody LOVED them. I used a gluten free devil's food cake mix and thought it would be disgusting. Let's just say they were the exact opposite!
To make them, all you have to do is:
  •  Bake a cake following the directions on the box. 
  • Wait for the cake to cool then crumble into a large bowl
  • Mix with one can of frosting (I just used my hands and half a can of chocolate, half of vanilla)
  • Form into quarter sized balls and put in the fridge or freezer for an hour or so
  • Dip into melted chocolate and chill again 
See? Super easy. I got a bunch of compliments on them and they were all gone by the time we left. The directions I followed said they'd make around 45-50 and they made exactly 45. Let's just say these are a definite repeat. Happy Saturday :)

Sweet Saturdays

Hmmm. It's time for the second edition of my Sweet saturdays! Yum. Don't you just love sugar? I do but I know my dentist and my jeans aren't such a big fan. Anyway, just to get your mouth watering, I'll share some of my favorite sweet finds from around blogland.

This combines two of my favorite things! Chocolate chip cookies and ice cream... YUM!


AHHH! I just love cupcakes! They're too cute. Especially raspberry ones!

When it comes to pie, I am all filling and no crust. These look so cute and oh so delicious!

I'm seriously drooling too much to continue. I'm going to go snag a cookie before I ruin my keyboard.

Sweet Saturdays

       You can either take this post one of two ways. You can groan and say "Two food posts in one week?" or you can run to the pantry, make sure you have all the ingredients and then get baking! I personally suggest the second option. My mouth is watering and despite the fact I just had breakfast, my stomach is grumbling.
Now onward with the food post! Since these are "sweet" saturdays, how about some sweet recipes?
Since the 4th of July is next weekend, how about some red, white, and blue themed desserts?
You don't get a say in the matter.

I don't really think you have to use a trifle pan for this. I'm thinking it would be fine in just about any container or pan. Still looks delicious and the directions are super simple! 

I think you could just go simple and make a red velvet cake, use vanilla frosting, and top it with strawberries or raspberries, and blueberries and cool whip. I think I might have to do just that. I seriously am having a baking urge! 

Tomorrow morning, bright and early, I get to enjoy a 17 hour car ride from Mississippi to Michigan with a 3 year old, 2 year old, and a 2 month old and stops every 2 hours so the baby can nurse. This car-ride is looking longer....and longer... and longer... oh boy. I'll be happy to get home.
